Farmed: 

Black tiger prawns are most commonly farmed for use as cutlets; usually Thailand, Vietnam, China or India.

Characteristics: 

When raw can be pink, grey, green or bluish in colour; when cooked bright pinky-orange. Plump meat with sweet flavour.

Available: 

As cooked or raw. Peeled prawns with their tail left on are known as prawn cutlets (left).
